Our Craft: Traditional Methods, Local Quality
While biltong can be made from any meat, we choose premium cuts of top sirloin and picanha beef from local Empordà farms.
Each piece is briefly salted, then carefully wet-cured in a blend of apple cider vinegar and Worcestershire sauce.
We hand-coat every strip with a distinctive spice blend: coriander seed, black pepper, cloves, and a hint of chilli.
Finally, the meat is air-dried to your preference—ranging from moist and tender to firm and intensely flavored.
A Tradition Born of Necessity
The word Biltong itself is a blend of two old Dutch words: "Bil" (rump/buttock) and "Tong" (strip/tongue). This name explicitly refers to the cut and shape of the preserved meat.
Meat preservation has ancient roots, but it was the 17th-century European settlers—primarily Dutch—who refined the process. They added vinegar (to kill bacteria) and spices such as coriander and pepper in addition to the salt-curing. Later, in the 19th century, Worcestershire sauce became a popular addition to the recipe.
Biltong became a vital food for the Voortrekkers during the 1830s Great Trek. The process created a lightweight, non-perishable, and highly nutritious source of protein, essential for survival during long journeys across the vast South African interior.
With the advent of modern refrigeration, Biltong was no longer solely a survival food. It transitioned into a cultural icon and a beloved national snack. Today, it's enjoyed globally at social gatherings and sporting events.
